Old tofu past its prime with liquid definitely has a bad taste. I have also had amazing tofu. There is a place near me that does a crispy tofu with a dry rub similar to crispy chicken.

Not really.
Had old tofu in fridge. Didn’t really drain it. Tried to fry it. Disaster. Old tofu past its prime with liquid definitely has a bad taste.
